Peppermint Creams

My daughter checked out a cookbook from the library and was so excited to get cooking with me!  This was the first recipe she chose to make, however we had to alter the measurements quite a bit, so here's what we did...

4 1/2 cups confectioners sugar, sifted
10 tablespoons sweetened condensed milk
1/4 - 1/2 teaspoon peppermint extract (be careful, if you have a strong one you may only need a few drops, apparently I had a very mild one and it took a lot)
few drops green food coloring
6 oz milk chocolate (dark can also be used)

Mix sugar and sweetened condensed milk in bowl, stir until a crumbly mixture is made.  Add extract and food coloring then knead to smooth firm mixture.  You can lightly dust counter top with confectioners sugar then roll out  to 1/2 in thick.  Cut out with small round cutter then place to dry on parchment paper.  Melt chocolate and dip each cream halfway, place back on parchment paper to set.

This is one of our family favorites!!! Hope you love it as much as we do!

1 lb ground beef
1 packet (1.25 oz) taco seasoning
2 cups water
2 cups minute white rice, uncooked
1 cup shredded cheese
2 cups shredded lettuce
1 tomato, chopped

Brown thawed meat in large skillet on med-high heat, drain.  Add 2 cups water and seasoning mix, stir and bring to boil.  When boiling, stir in rice, sprinkle with cheese, cover.  Cook on low heat 5-7 minutes.  Top with lettuce & tomato just before serving.

1 Spike Cake Mix
1 15oz can pumpkin

It only takes these two ingredients, do not add anything more to it.  Mix together then bake for 20 min at 350*

You can enjoy them how they are or you can frost them with cream frosting, mmm.... delicious!

1 15oz can pumpkin
1 10 oz Bag Mini Semi-Sweet Chocolate Chip Cookies

Mix the 3 ingredients together then bake for 20 min at 350*

Dustin was helping me with this recipe, we love mixing and guessing what will taste delicious... this was super yummy!

5 lbs pork
1 large onion sliced
2 apples peeled & cubed 
2 garlic cloves
3 cups apple cider
1 1/2 cups water
salt and pepper to taste

This time I used the crock pot on high for six hours.  I like it best when I have it on low all day long so it melts in your mouth.... mmm!  Combine all ingredients in crock pot and cook your favorite way, at least on high for six hours.

Yummy Mashed Potatoes

Yummy Mashed Potatoes

My family loves mashed potatoes, so any new variety of flavor I can add to them is always a good thing!


13 potatoes
1/4 cup butter
1/2 cup milk
1/4 cup sour cream
1/4 teaspoon minced garlic
1/4 teaspoon minced onion

Peel and boil potatoes, completely covered with water on medium heat, for an hour or until soft.  Once they are soft drain the water, mash to smooth and mix all ingredients together.

Serves 10

2 11 oz cans mandarin oranges (drained)
1 16 oz bag frozen raspberries (keep frozen until you mix them in)
2 8 oz containers cool whip
1 14 oz can sweetened condensed milk
1/4 cup lemon juice

Combine and chill in fridge.  Enjoy!
